Captain Marvel's Kickass Cookies

This week we are covering one of Marvel's newer movies. Captain Marvel Blasted into theaters in March this year readying fans for Avengers: Endgame and giving viewers the ultimate lesson on "girl power." In Captain Marvel we meet Captain Marvel the former Carol Danvers who is amid a war between her assumed race the Kree and another alien race, the Skrulls. Throughout the movie we are treated to various kickass fight scenes, Carol's discovery of herself and truths surrounding the Krees, and a not so hardened Nick Fury.


In today's blog I will be sharing a recipe for some Kickass and guilt free Captain Marvel themed Sugar cookies. And, unlike Nick Fury, this recipe will not be leaving you with trust issues.

For the cookie recipe you will need:

Dry ingredients

- 1 & 3/4 of cups of white whole wheat flour

- 1/4 tsp of salt

- 3/4 tsp of cornstarch

- 1/4 tsp of baking powder

Wet ingredients

- 2 tbsp of butter, melted and cooled to room temperature

- 1 Large egg, room temperature

- 1 & 3/4 tsp of vanilla extract

- 1/2 tsp of almond extract

- 1/4 cup of honey

For the Icing recipe you will need:

- 1 cup of white sugar

- 2 cup of confectioners sugar

- 4 tbsp of water

- 4 tsp of low-fat milk

- 1/2 tsp of almond extract

- Red, yellow, and blue food coloring


Instructions:

For the cookies

1. Mix the flour, salt, cornstarch, and baking powder in a medium bowl. In a large bowl whisk the butter, egg, vanilla extract, almond extract, and honey. Once each bowl is mixed, slowly add the dry ingredients to the wet ones, being cautious to thoroughly mix the dry ingredients in before adding more.

2. Once mixed, put the dough on a large plastic covered cookie tray. Roll out the dough into a rectangle that is about an inch high. Cover and chill for at least and hour.

3. Preheat the oven to 350 degrees and set out two well greased cookie trays. (You can also use a cookie sheet or parchment paper to substitute greasing the tray.)

4. While the oven is heating up take out the cookie dough, flour the tray is on and roll it out until it is about 1/8 of an inch thick.

5. Use rectangular cookie cutter or a knife to cut out around 24 squares. I used a knife and lightly etched out where I would be cutting.

6. Bake the cookies at 350 degrees for 4 minutes. Then, take them out of the oven to etch in the design. I found that the Captain Marvel design can fade if you cut it into the cookies before baking them.

7. I hand etched the design into the cookies, but you can find the awesome cookie cutter it was based off of on Etsy starting at $1.50

8. Put the cookies back in the oven and allow them to bake for another 4-6 minutes or until golden. Once finished take the cookies out and allow them to cool fully before icing.


For the icing:

1. Combine white sugar and water in a medium saucepan over medium heat for around 5 minutes. Let it simmer until the sugar is dissolved and a syrup is in its place.

2. Stir the confectioner's sugar and milk together in a small bowl until it looks smooth. Beat in almond extract and 4 teaspoons of syrup you just made until the it all looks smooth and almost glossy.

*if the icing is too think for you to work with add more syrup to your liking

3. Separate the icing into three even portions and add yellow dye to one, blue dye to the next, and red dye to the last.

4. Use an icing piper (which can be made easily by cutting a small hole into the tip of a ziplock bag) and use the pattern cut into the cookies as a guide for where to color. Let each color set before adding a new one to avoid the colors mixing together.

*I personally iced the Hala star as it took the most work and precision.


Chef tip:

These cookies go great with a cup of coffee, I like to dip them into black coffee when I want to add a little kick to them. Together these coffees and cookies will get you ready to defeat the day's challenges.
